I'm just getting started on the Trumpeter 1/16 T-34/85 and the color call out is for flat white. Is this right? Or would it be more of a buff?

Hi the best colour is Ivory , as it the colour inside is not a true white , cheers ian

Semi-glossy white for the walls and some of the fittings, 4BO (or the equivalent) for the main gun and floor ammo storage boxes, though during the war these may normally have been black, black for the floor, though you'll sometimes see primer red which I think is a non Soviet, post war, way of painting.
I haven't been in any Soviet tanks that I recall being buff/off-white/ivory but that's not to say it didn't happen.
