Where would I find pics of the LAV III's that were used in the UN mission in Eritrea? I Googled and didn't find much.

Brad, there's a smattering on combat camera which you've probably seen.
Note the UNMEE LAV-III's did not have the Add on Armour as depicted by Trumpeter and RM kits.

Not unless you chisel off the bolts and fill the seams between the armour panels (despite what the Trump instructions show you).
If you are set on UNMEE, you could do a ASLAV + Coyote conversion.

The Trumpeter kit is only accurate for a LAV III deployed to Afghanistan between 2003 and 2007.....not Canada, not Bosnia, not Haiti, not Eritrea.
Only the LAV IIIs in Afghanistan had the add-on armour.
If you end up doing a Coyote in Eritrea it also has to be a version with no add-on armour.
Sucks, huh?

Yes it does suck. Why can't Trumpeter do their homework? Oh well, I guess I'll think on her for a bit. Nice kit otherwise.

I think that if you cut a little off the hull can be done LAV III unarmored. Turret from ASLAV or edit LAVIII. For the converse is good that Trumpeter did a very slim add-on armor. You can remove it. Here is a photo TUA free add-on armor
