The DML/Dragon kits of Chinese Korean War soldiers have them equipped with then-current Soviet weapons. However, I read in my Osprey book that Chinese soldiers in the beginning had only old Japanese, Chinese, or captured Maerican weapons. Which is the case?

Just look up the dates of everyone's involvement in Korean War.
The Chinese entered N. Korea on October 25, 1950. Stalin did not agree to support Chinese with military equipment and ammunition until March 1951.

In the beginning of their involvement they had a mix of whatever they could find, from thommy guns to jap and german and even belgian I seem to remember. Some even had nothing more than pointed stick (acc. to my Grandfather who was there from Aug. 1950 to Jan. 1951). Later on they had soviet weapons.
So it all depends on the period you want to model.

Thanks. I was planning to show the very beginning when they just entered Korea, much to the UN forces' shock.
