The Tamiya M1025 and M1046 kits are the best out there, but you'll want to change the tires and add aftermarket SINCGARS radios to represent an early OIF vehicle (although the Tamiya old-pattern tires were still used in early OIF). If you wan to depict a Humvee currently in service in Iraq or Afghanistan, you'll have to buy the MIG M1114 conversion set (and scratchbuild the additional modular armor that goes on top of the M1114 armor, too).

By far the Tamiya line of HUMVEE kits. I've built both the M1025 and M1046 and they are beautiful little kits. I kinda want another one. They go together so easily and look great straight out of the box. You don't even need much in the way of markings for most HUMVEE's. Quite a few had nothing more than a chevron or two and maybe a couple of numbers on the doors (if it even had doors).

Now the long answer:
Well it depends on what you are looking for and how much you are willing to spend. Tamiya, as everyone has said is by far the best, but it'll also be the most expensive. The solution to that is to keep an eye on Hobby-Lobby rebates and when they have a half off sale on models, go crazy. Now if you are looking for an armored humvee or a humvee to use as a base for conversion (such as making an M1114 with the MIG set), again Tamiya is all the way. However Academy makes the M997 Maxi ambulance and are the next step down from Tamiya. I believe that Academy also has a soft top version (Tamiya has an old early soft-top version that I believe was an Italeri or Academy copy, don't be fooled, that is not the same as the M1025 and M1046 Tamiya currently sells). Italeri is the next step down after Academy.
Aggressive pattern wheels (as they are called) are made by a number of users. Perthmilitarymodelling.com(click here) has a good review of them. Not included is the MIG set of wheels, which I've only heard one complaint and an infinite number of compliments.
ProArt makes the SINCGARs set and usually you can get it from Blast Models.
MIG is the only producer of the M1114 uparmored humvee conversion. Its requires a bit of knowledge of resin and some knowledge of conversions, but its worth it in the end.
I, um, think thats about it. There are numerous aftermarket accessories to trick out your humvee, but they are numerous. One I will mention and highly recommend, is Blast Model's humvee weapon's accessory set. It's all resin, but incredibly recommended for updating a humvee weapons platform.

I thought I saw a Tamiya kit that had armored doors.
And right on the Hobby Lobby stuff but they don't carry the newer ones only the Original one.

My father is building the Tamiya M1046 Humvee Tow which has reinforced doors. I think he is buying the Legend Productions conversion but the chap at Friendships models is a tad differcult to get hold of.
He's built both Italeri kits and from what I saw he had problem after problem with them so avoid them unless your budget is tight.
I think this would be a interesting scratchbuild project from the Tamiya Tow.

Its a portotype to combat sniper fire. I've seen serving Humvee's with semi turret protection but not the entire dome.

Is your father doing an
IDF conversion, because that is the only Humvee conversion that Legend does. They also do an OIF Humvee storage. Incidently, the IDF Tow Humvee does not have doors.

Yes he's scraping the doors as they are not needed. I tried to buy him the pro art dumvee but couldn't get hold of one.

That Dumvee is like 40 Euros cost as much as the Kit.
Think I will stick with a Regular or mid Humvee with doors and tires.
Used to have a bunch of Italeri Humvess got rid of them.
