What color would a wooden building be? A P.O.W. Hut for instance.

Depends. New untreated wood can be done reasonably well with Model Master Wood as a base, though that tends towards a rather warm tone. Aged or weathered unpainted wood can best be done with a coat of a medium gray washed with black or Payne's gray and highlighted/drybrushed with a lighted version of the base color. A bit of green at the base might indicate some mold and just some final highlights of MM wood will warm it up a bit.

If your going to build something out of wood there is a product in the Railroading section of most hobby shops sell several products to age new wood. I can't remember their names right off hand.
