Zimmerit was the German brand name of the original antimagnetic compound applied to actual tanks. It was made the Zimmer Paint and Chemical Company of Berlin.
It can be simulated on models using a variety of putties, either two-part epoxy or polyester, or lacquer-based plastic body putty (the two part putties are better, in my opinion). Some more experimental souls have had success using wall patching compounds and other exotic fillers.
It can be textured using a metal or stiff plastic comb, a stamp, a roller tool or a screwdriver blade. The metal comb tools are made by Tamiya (again, some have had success using pieces of razor saw blades, or even disposable plastic flea combs from the pet shop). AFV Club and Lion Roar offer roller dies (or "Does" as the labels say--the makers don't speak much English). Airwaves in England offers a couple of stamps sets, as did a US company called Zimm-it-Rite.
There are also sets of premade Zimmerit available for many kits in thin resin, which can be epoxied directly to the model (Cavalier and Atak are the major makers), or in photoetched brass from Eduard (cheaper, but harder to work with). Verlinden also does some PE Zimmerit sets.

I used the cavalier set for my tiger.
Just make sure you buy the set BEFORE you begin assembly. And make sure you have the correct set (i know this from expeirince)
