Can I use the 48 star flag as an air recognition panel on the back of my Sherman 105 HVSS, or where the air recognition panels used only red/orange?

US Flags are not used as recognition panels since we, the US, deem it degrading to the falg to have it thrown across the back of a vehicle. Its part of our flag etiquette and there are regulations/laws that dictate its use and display. That is why we use the VS-17 panels, orange on one side, red on the other in WWII. Currently, they come in a variety of color combos.

The only time you could really get away with painting (rather than draping) a US flag on a tank would be the Torch landings in North Africa.
