The biggest differences are in the rear. The hull has been extended and is angled the opposite way. There are rectangular covers on the rear plate for the fuel outlets as well. The engine deck is also different. One good source of drawings for this is Sqandron's "the Centurion in Action."

If you use the Shot Kal that gives you the extended hull to the rear, but there differences so some work is still needed. The engine deck has the armoured louvre covers to the front and rear sections with fuel filler covers to the right hand side of the front section. These are hinged at the centre as the Mk 3/5, but you will either have to scratch build one set or convert one set from another kit. if you have already done a Shot Kal, an Oliphant ( Cromwell conversion) etc you may have a set spare. The best thing is to get as many photos together as you can and good luck. Find a real one or a MK8, but many were reworked with Mk10 engine decks later, just to confuse!!!!!!
At least you do not have to do much to the turret, just a mantlet cover and that iseasily done using rolled out milliput, or similar. However, be careful not to include any early or intermediate Mk3 features, so do not follow the instructions without being certain. Someone needs to write a book!!!!!!!!
As I said good luck, I intend doing either Mk 7,8 and 10, or derivatives, but am stuck on finishing a Swedish Centurion Strv108 and a FV405 (a Cent with a183mm gun), and then a Marksman Cent, but that will need a hull converted to a Mk10. Should keep me busey for a while!

The Shot Kal hull extension is simply an armored fuel tank added to the existing hull. It is different than the Mk 7 hull, and is angled differently. It's still going to take a little scratchbuilding...

I've photographed the differences for you. Here's the '67 Shot, with added hull extension, because most were like this by '67, as AFV Club has in their later Shot Kal:
