I would like to model a vehicle from one of these two battles in which I could use a winter whitewash.

From my understanding the third battle of Kharkov was during the winter as well as Stalingrad.

Can anyone point me in the direction of the armor used and any useful photos?

imo, you can go for a Panzer III or IV, or go for an early type Tiger I
