Have their interiors ever been painted white?
Or is everything Olive Drab.
And a side question...Did the Russians ever use the Priest?

I would go with OD. The reference book I have shows a lot of them with the same tone/color inside and out.
Don't know if the Russians used them.

The lower driver's area should be white, with the open fighting compartment OD.

Open-topped stuff got OD on anything that could be seen from outside, so all of the M7's interior should be OD. (Some TDs and the M8 Greyhound had white around the driver's section because it wasn't exposed like the turret area...)
And all the pics of surviving examples I have seen show OD inside, although the usual caveats about accuracy on preserved vehicles apply!

Olive Drab in the interior including the drivers compartment, some transmissions and interior plates were white.
The M7 was not to my knowledge shipped to the Soviets, although the rest of the allies had them.
