The Germans didn't use white as an interior color, they used Ivory (Elfenbein), also called interior buff. Lower hull interiors were often gray green early in the war, but later were often left in red primer. Gray green was used on some mechanical components, like transmissions. Seats were real or synthetic leather, probably black. Sorry if this is maddeningly vague, but the only interior photos I've seen of a surviving Porsche Tiger chassis (the Aberdeen Elefant) mostly show rust at this point.

The Aberdeen Elefant was recently fully restored and repainted on an episode of Tank Overhaul on the Military Channel (Channel 287 on Direct TV) and it shows the complete details of the work. Also there is an episode on Mark V Panthers being restored that shows every interior detail of the tank, including seat construction and colors.

I believe you may also be able to find these details on the military channel's website as well...
