I was just given a Tamiya U.S. Marine M60A1 w/Reactive Armor. Did the IDF ever use this? Or could I build it sans Reactive Armor as an IDF vehicle? Thanks.

Nope, IDF had their own type of ERA. But you're correct, leave off the armour and just build a plain M60A1 - just have to get a set of AFV Club 35005 'chevron' track.
