Jeff,
All manufacturer's instructions err on the side of caution, especially paint makers. How do they know whether you are spraying in a humidity and temperature controlled room (like I do), or a garage in Florida in June with 100% humidity? Even so, the manufacturer will recommend optimum times to allow their product to perform it's ultimate best.
That being said, Vallejo varnishes are excellent, and I have added an additional coat in as little as half an hour without it milking on me. I have also waited 3 days for my final varnish coat to cure before using other mediums on it.

I use window cleaner as a solvent for them and if I apply it in thin coats, I never wait more than 10min.

If I have to thin Model Air, (and varnishes I never do) I wouldn't use anything containing alcohol or ammonia. Vallejo thinner, Distilled water, or Liquitex Flo-Aid are the thinners to use for Vallejo products.

Wait a minute....Francisco, does the window cleaner you use have ammonia in it?
I was told ammonia products like window cleaners (Windex over here) did not work with Vallejo.
I'm intrigued....

Matt, I know you and others have said in the past (as you did now) that ammonia-based products like Windex, etc. should not be used with Vallejo. However, I have to say that I've heard from many who use that combo without issues. And judging by Francisco's excellent sub I can tell it works for him too. I'm at a loss on this one. I know I've tried using Windex with Vallejo Air once and ended up with a completely clogged airbrush but I can't understand how others make it work the way they do. What's the trick here?

I too have not had good luck using windex to clean out my AB after spraying vallejo. For me it makes a mess.Somewhere in another thread Simple Green was mentoined as a cleaner.I had some and tried it and it worked well.Jeff
