What colors were accessories like bush hats and locally-made bags? Do I correctly assume they varied a lot? (Even US World War Two clothing and equipment did.)

Yes, you can use just about any variety of natural colors; khaki, off-white, light borw, dark brown, greens, etc. Just about anything was used.
