I have seen that special forces have been using M1151 Humvees with an fighting space in the bed of the vehicle.
my biggest thing is the gunner protection would they ever take it off or is it a must now

No, it's M1165 based GMV - M1165A1 Special Ops version. All GMV variants used now by US Special Forces (Green Berets, Navy Seals, MARSOC etc.) are based on M1165. Of course there are GMVs built with M1151 bases used, but they're made not in facotries (AM General or affiliates) - for example Iraqi Special Operation Forces are using many GMV which are built based on New Iraqi Army old M1151 Armament Carriers.

I've seen vehicles without any protection (for example GMV-ST used by USAF), but only during exercises on USA territory. All of US GMVs used to have gunner protection (many types of shields, many types of turrets) in Iraq or Afghanistan.
