Whats the best way to make a soft top look like canvas? Like on a humvee or old duce and a half.

I sometimes bend bacofoil over the kit part, crinkle it up glue in place nice and smooth, when set prime then paint. Works most times and looks pretty good.

Paint the canvas a light Olive Drab, then drybrush with German Dark Yellow.

But how do i get the creases to look darket without making it look like just brown lines

In that case you can start with a dark OD, then the light OD, then the dark yellow.
