struggling to find the right colour to paint my tamiya afrika korp figures as online i see so many different colour of uniform , i understand they fade etc but im so unsure.

We have this discussion on here all the time. Sometimes with a lot of acrimony.
You are correct when you say there is no correct color. The trousers and tunic can be anywhere from a tanish grey green all the way to a medium dark olive. The fashion in the AK was to bleach the soft caps in gasoline so almost white always works. Some of the webgear was khaki and made from canvas in a tan color while some was black ala the European style. There were all kinds of variations.

It was also common practice to scavenge uniforms from captured enemy gear and desert vehicles. Keith Douglas reported this practice in his book from Almein to Zem Zem. He remarked how he was once wearing clothes all provided from the enemy, and also commented how the germans took their gear off his wrecked Crusader Tank. So any mix of Itlain, British and German colors would do.
