I've had a good look around the WWW and can't seem to find any pics of the 'standard' MT-LB use in the Syrian conflict. I'm finding it hard to believe that such a common Warsaw Pact vehicle isn't used here. Any pics out there?

They are there. Many of them are being modified into gun carriers, ie putting gun systems on the roof. Also, many have been passed around to new owners, ie Iraqi to ISIS to Syria, back to ISIL, recaptured by Iraqi forces etc...and all permutations in between.

May I recomend to join the BMP, BMD, MT-LB group or the Syrian Civil War research group on Facebook. There are plenty of photos there.

I noticed some of the vehicles seem to have much wider tracks than the standard ones.

I guess these are fitted with low-pressure 565 mm (22 inch) tracks, originally used on the MT-LBV "Arctic" variant.
Here's a Finnish Army MT-LBV fitted with the same tracks :
Here's another view of a Kurdish MT-LB fitted with a "scratchbuilt" turret and add-on hull "armor" :
Another one :

That’s an Iraqi version.
They have a version of this track at Camp dodge , IA on their MTLB.
