Seeing all the stryker pics my hands start itching. Is there a model of the Styker available or perhaps a conversion for the Italeri LAV to convert it into a Stryker (if possible) ??

As far as I know there is no plastic or "mainstream" resin kit of Stryker available. I expect that some exotic garage manufacturer probably offers resin Stryker somewhere in the world, but I have yet to see one.
Conversion is not possible - Stryker (LAV III) is much bigger and generally completely different vehicle from old LAV.
