In the case of Shermans with 3-piece bolted transmission cover, was there a visible gasket between the sections where they bolted together? That is, visible when the sections are joined?

Not that I've ever seen. Just bolted tight. That said, the flanges were often uneven, one sticking out a bit further than the other, but the joins were absolutely flush.

No. The mating faces of the end sections had a raised circular ring that fit within a circular recess on the center section. The gaskets were in that ring/recess joint.
