Are there any reasons not to use enamels for chipping instead of acrylics? I want to try enamels because acrylics dry too fast and the enamels are easy to remove if I make a mistake.

The reason I use acrylics instead of enamels is to avoid using hazardous thinners like white spirit/terpentine etc... But that's a personal choice of course.

I further don't see any reason why it would be a bad idea to use enamels for chipping
