I want to build the tank in the pic (I think it is 55M), my question is what are the differences between the M and AM, Ill be using Takom AM kit.

Its two names for the same thing as far as I am aware.

AFAIK, T-55M is the upgrade of the older T-55 variant, while the AM uses the later T-55A variant as a base.
