Can someone please help me understand what is the thin wire I sometimes see on the side of a turret and going around the hull and sometimes wrapped around the main gun? I have seen this quite frequently on Adam Wilder's projects, but I am not sure what it is? I am having a hard time uploading the pic I am talking about, but maybe someone knows? Thanks for any help.

Without a photo hard to say!
If it is around the gun tube it might be the electric cabling of the gun simulator.
If it is on tank turrets it may be wiring to attach camouflage.....

Is this one of builds by Adam that you are talking about?

It's my opinion (and I agree with Paul) that this wire was used to attach camouflage to the tank (tree branches, etc.).

This is correct.

Ex-Patton Museum PAK 38 shown below with similar Camo wire feature installed. The pointed, spaced armor bolts all had a cross hole drilled in the end just for this purpose.

Another photo I happened across while researching for other things:

A Nashorn with camo wire. Not much need for it in the winter. In this case it looks more like rope than wire but used here for the same purpose.
