I build occasionally MRE boxes. and found it easier to wrap the Tamiya paper parts around a core made of dense insulation foam. Tamiya paper to instable, so I build on box OOTB(pun intended)
and the make a core to fit in the box. Since real MRE boxes are very sturdy, this will enhance the stability of the paper parts.
About cutting, I use either a pair of scissors or a modelling knife. It helps if you use the dull side of the blade to make the bendline and then cut out.
