If you don't want to wait then Bronco do an Excellent 25 Pdr crew in Battledress and Jerkins that can be easily adapted for a Sexton. They also do a crew in Late Desert war garb suitable for a priest crew in Tunisia/Sicily / Italy

And no there was little to no difference with the postwar Archers. The skirts were actually part if the regular vehicle but usually removed during NW Europe service.
There's an awful horror movie filmed in Egypt about Africa Korps zombies that had a running Archer in it.

I just picked up the Valentine 4 days ago and it's going together nicely. Might think about this for the future in Egyptian livery maybe. I saw that film too, it is atrocious, but as you say, it does show the Archer in motion.

Three figures? Did Tamiya cheap-out? Should be four crew. Or was the driver a casualty when he accidentally put his head in the way of a recoil? If Tamiya does release a three-figure crew set (?), they would be useful for the Bronco model.
