I'm not exactly sure when the Fox was withdrawn from service. However, many of the turrets have been mounted on old Scorpion hulls resulting the hybrid vehicle 'Sabre'. I have pictures of the Fox serving with the British Army of the Rhine as a light recon vehicle and at one vehicles were sent to Northern Ireland to help with the troubles.
A few good references I have come across would include the following
British Armoured Cars Since 1945 - Military Vehicles fotofax - Simon Dunstan (OOP)
Britsh Army Fighting Vehicles 9145 to the present - Tanks Illustrated #12 - Simon Dunstan (OOP)
Scorpion the CVR(T) range - Tanks Illustrated #22 - Simon Dunstan (OOP)
Europa Militaria - British Army of the Rhine - Carl Schulze
The first three titles are out of print (OOP) but well worth tracking down on eBay, bookfinder.com, Barns and Noble (used book search) or Amazon (used book search).
I hope that helps.
Cheers - Dan

Concord's 'Armour of the West' has 2 Fox pictures during Certain Shield '91 with NORTHAG in Northern Germany. Reg # 09FD24 and it says it's with the Yeomanry territorial forces(TA?). Also one of the Wessex Regiment during Bold Grouse. Other reg #s 09FD78, 01GM30, 10FD39, 10FD71 and 01GM30.
The book mentions they are used in regular and TA forces including the Berlin brigade.
