Greetings, I’ll be touring in Europe next month and was wondering if there are any good model shops I should check out in Amsterdam, Cologne, Luxembourg City or Brussels. Any help?

Ralph, There USED to be a nice figure shop off the Grand Place Square in Brussels. Autoworld & the Military museum in the Cinquataire area worth a visit. Don't forget the chocolate & the awesome beers.
Luxembourg, the old battlements are fun to hike around. A side trip up to Clervaux to see Armorama's own, Claude Joachim's massive BOB diorama. Haven't been yet but it's on the agenda.
Amsterdam, a side trip to Madurodam, in Den Haag. The world's biggest diorama !
Sorry, not much help on hobby shops. I've just kinda stumbled upon the ones I visited. Ask at the Tourist information centers. Couldn't hurt.

Really close to Amsterdam Schipol airport is Aviationmegastore. I know they're not an armour modelling shop as they only do aircraft models but they also have a giant range of supplies and paints...well worth a visit and their scale modelling dept manager Erwin is a really nice helpful guy too.
Dersockleshop is in northern Germany...great source of model kits and supplies for dioramas.I'm not sure if they have a 'bricks and mortar' store or if they are purely online.
If you're going to the london area then Hannants is amazing. Their london shop is a few minutes walk from Hendon RAF museum (well worth the visit!) and is well stocked.

Hi Christopher, I will be in Köln, then driving down through Koblenz to the Mosel valley. I was thinking of stopping in the military museum in Koblenz, if I can convince my wife...

I would certainly recommend De Houtloods in The Hague (within 1 hour of Amsterdam) http://www.houtloods.nl/ I would gladly have recommended Wapstad in Rijswijk but they closed recently and all their stock has gone to de Houtloods.
