Welcome to the site! I make mud by mixing baby powder with an acrylic dark brown paint and a little static grass. I usually make the stuff so it's the consistency of slightly lumpy by still runny oatmeal, then apply it with an old brush by dabbing it on to give it a patchy, splattered look. Once it's on the kit, you can apply washes and drybrush as desired.
There are many, many other methods, but this is my personal favorite.

Try a mix of white glue, water, baking soda and the appropriate paint color.

I use premixed wall joint compound mixed with some real dirt ..some paint pigments some pieces of an old paint brush hairs cut to different lenghts and sometimes throw in a bottle of tamiyas earth color for good measure...all this is just spread over the tracks and left to dry ...you can add washes and differnt colors to the dry mix ...and what is fun is that if you think you have put too much on you just use a wet rough paint brush and scrub off the excess...

I have used plaster of paris mixed with static grass, Italian spices and other stuff for texture. I put some black or brown paint in the mixture to get rid of the white color then just slop it on just like real mud. When it's dry just paint and dry brush.
Paint pigments mixed with mineral spirits also work well for less dense mud.

I have used actual fine, sifted dirt mixed with white glue, static grass, tall grass clippings and just about anything else that I could find laying around.
The dirt mix will create the basic color.

I see there is a thousand and one ways to do it, I use celluclay (is that correct?) mixed with the desired color and static grass (optional).
