Interesting, been messing around with the Italeri Staghound and was under the impression all Staghounds had side fuel tanks but the Danish seemed to not use them.

Actually, I'm pretty sure NONE of the pics show Danish Stags. From what I can tell, these were taken during the liberation of Copenhagen by The British and possibly Canadians. Plus, The Danes used Mark 3's and no Mark 1's.
With that being said, the Canadians routinely removed the side fuel tanks and used that space for extra stowage. Some Brit vehicles possibly had that change as well.
