You picked a tough one here...
There are two conversion sets that I know of, the one is for the simple field built Russian 1944 conversion, check out my conversion ( http://www.afvs.co.uk/t34bergepanzer.htm ) the other is the Aries resin block - which is the correct post war model you are thinking about, but which is solid resin.
To get the hatches open you'd need to scratchbuild the super structure and the spade, winch and cables etc. Do you already have the Tamiya kit??? You might find it easier to start with the SU-85 which has a very similar built up superstructure (lower than the SU122 one) which is at least hollow. Don't forget too that you'll need the full spider late war / Korea type wheels, not the all steel or the dish wheels.
If you can get hold of a copy of Military Modelcraft International from September 2001 there's an article by a guy who went down the same road and got a pretty good result.
Best of luck

I've got the Aires. It's a great conversion. However, while I'm not possitive, I don't think it's available anymore. I do see it pop up on ebay occassionally and it typically fetches a decent price.
