I've just fitted an anchor chain to my DUKWs anchor. My question is, where does it attach to on the Duck? The anchor is stored on the stern plating, but theres no obvious attachment point for the other end.

Let me see if I understand you. You attached a small length of chain to the end of your anchor and you're wondering where the other end of the chain goes?
If so, I believe it was attached to the other end of the winch when it was thrown over.

Bugger! Does that mean that I should have attached a cable not a chain? Or (he asked hopefully) was the winch meant for chain?

No. I've seen them with a short length of chain attached. They would then attach the cable to the winch as I understand it. You could leave the chain loose. I actually created a mounting system that strapped my anchor down. Here's an early shot of mine before it was finished:

I think Mark is right. From everything I can discern from photos, the anchor could be attached to the winch, but wasn't always.
Here's a site with some great DUKW detail shots, including the anchor and its mount on the rear deck. http://www.kmk-scaleworld.be/walkAround/DUKW/
The Italeri anchor is a pretty simplified version of the thing -- I used bits of it to scratch my own.

Actually, many times an anchor for a small boat (ie, duck) will have a length of chain which is attached to the anchor and then is attached to the rope. This allows the anchor to get a good bite of the bottom and not come lose. The entire chain and rope assembly is called the anchor rode.
