Greg I'm not completely certain which kit(s) you're asking about the gun breech. The Tamiya new Easy 8s don't have that, and Asuka/Tasca kits don't either.
I also raised my eyebrows when the word "over-engineering" was applied here. That judgmental word means, for the same level of details, a kit maker decided to use 20 pieces to represent it rather than 3. It does not mean a kit maker uses more parts to create more intricate details, which I think is what the objection was; certainly there was an opinion here but the opinion itself would better be expressed as "it has too many parts for my taste" which is more neutral.

Amazingly for Shermans we only have the Ancient (but workable) Italeri 76mm breech and the Tamiya 75 from their M4 kit until now when you can have the whole 76mm interior (RFM). Tasca went to the bother of giving you a coax 30 cal in cradle but no main gun, bizarre. If you have the old 76mm Italeri Shermans (or their DML variants (HVSS) you can raid those for a Breech etc.
A quick comment on Detail vs Over Engineered. In this case the Tasca kit offers vastly superior detail but this comes with more parts. The Tamiya kit is pretty light in this department when compared
