I am throwing around the idea of building the Polish PT-91 MBT
and I am wondering which T72 kit would be a good candidate for the PT-91 MBT

Your Best Bet would be any of the Trumpeter T-72s; the "A" or the "B" series ! The Twardy would require A Extensive Conversion of the Turret. There is A AEF Conversion for A T-72 Floating on E-bay rite now, but AEF does Not have A Good reputation for there sets
As Soon as you start your project Trumpeter will come out with A Kit of the Vehicle.

Modelkrak of Poland used to have a conversion for the Tamiya kit but I guess any other kit would be suitable. A full turret was in the box. Unfortunately Modelkrak don't do 1/35 anymore. Maybe could find a set on the internet.
This was for an early PT-91.

Both of these Conversions were based on the Tamiya T-72 !
The first was the Tamiya kit and the second was the Pirated Un-license copy of the Tamiya kit by Trumpy;
The Trumpy, kit can still be found in Batches on e-bay which I still can't quite Figure as there Boxed T-72s are Top rated !!
The Modelkrak stuff was Pure Junk like !! And not worth the effort !
As for A PT-91 there is still Hope that Trumpeter will Grace us with A kit, along with A DEGMAN

I built a PT-91 some years back using the AEF conversion and a Taniya T-72, while it was a fun build the only item I used from AEF was the smoke launcher mounts and scratch built the rest of the items. The big problem was the turret, as this is the wrong shape, it required me to cut the stowage box behind the smoke launcher mount in half so I could fit the correct number of appliqué armour squares.
I plan on doing a new on but I am basing it on trumpeter t-90 hull and one of miniarm’s 1/35 T-72B turret unsure which one as they are pack away ready for a house relocation, similar to the ones used by Malaysia. See link below for a picture but without the bar armour and APU.

One has to remember, that the PT-91 that Malaysia Purchased is Not the first PT-91, its A Different vehicle in its own rite ! More modern Optics, Fire Depression Systems, Lazer Detectors to name just A Few !!
Its more Akin to A T-72M4CZ just with Different ERA on its Turret Face ! The Conversion that TBS offered was more accurate in its Construction than were any of the other's And its To Bad they are No longer in Business
