your best bet would be Barrel Depots kit # 35040 - M7 3 inch Gun (for M10/M10A1)

Bent But Not Broken carries a full line of various aluminum barrels in their Barrel Store. I've gotten great service from them. Their prices are in Canadian dollars and not USD, so the actual price is considerably less than what is posted.

Is the Academy M-10 plastic barrel that comes with the kit one piece (like Tamiya Shermans) or 2 halves (like Tamiya Tigers).

No sweat. It is actually the worst kind. It is a three piece barrel. Two long half round pieces with an end piece. A NIGHTMARE to get round, symmetrical, and looking good. I found the barrel above for less than $10 bucks, so I am going to go ahead.

With the M-10, I don't believe I will need aftermarket tracks or PE, so I am going to invest in stowage items and a barrel.
