Hey 3442,
What you will find in Vietnam as far as foliage/terrain goes are:
a) Jungle
b) Rice paddies
c) Tall grass fields
d) Mountains (covered by Jungle)
Best materials to use for scale vegetation are dried flowers and plants from arts and crafts stores such as Michael's or A.C. Moore. For jungle vegetation you can also use plastic aquarium plants. For tall grass you can use old household paintbrush bristles or buy commercially available products from places such as Woodland Scenics.

When Im stuck for finding out what vegitation to look for I go to google.com and type in the location I'm trying to model. I then look for a tourist site. Usually lots of local photos of vegitation and houses building etc.
Here's a how to feature

Which Tamiya jeep are you talking about? If it is an M35 or M151A2, they were not used in Vietnam. M35 was WWII vintage, a few might have been used by the South Vietnamese, given to them by US. The M151A2 was not used till after Vietnam with the A2 version coming out in the mid-1970s. For Vietnam era, you need the Academy M151A1 model. It is the version used in Vietnam. Here it is:

for all plants, vegitation, foliage i used dried up flowers and paint them accordingly, since u are doing a vietnam dio, maybe you could paint the flowers glossy and make it look like it just rained! just a thought...hope all goes well

The major difference was in the rear suspension. The A1 was prone to flip over due to the set-up of the rear suspension, the A2 had a redesigned suspension that was more stable. Visually, they are slightly different. For starters, the A1 had a split windshield, A2 is one piece of glass. The A1 had a diffrent turn signal and blackout marker light setup than the A2 (see photos below). Also, A2 has an added tie down ring on the rear lower quarter panel behind the rear wheels, A1 did not and the angle of the wheel well came all the way down to the rear.
M151A1 (notice lights, windshield, and rear wheel well minus tie down ring)
M151A2
Hope these help.

No idea when it was taken, I got it from FAS.org website, a great site for referances. I would guess early '90's though.
