Does anybody know how many men it normally took to operate the 88 mm Flak 36/37?

I think it would depend if the gun were used in an AA role or AT. For AA it took 2 members for gun-laying for the proper alttude and setting the ammo fuses. Most photos show at least 6 crew members in action, but then the guy taking the pics is presumably an additional crew member.
