Some people suggested to paint the parsely so it doesnt change color, but I first used 10 yeaar old parsely and it was a light shade of brown, perfect for late summer/fall

Last tree i made 2 days ago i used dried parsley and mint , for cooking and they had a deep green colour that with some matt varnish went even better
