Has anybody tried adding an interior to the big back end of an AAVP7? I wasn't able to find any aftermarket kits at any online store.

No atermarket kits for it. I have scratched mine. It is not 100% accurate, but close enough for me. I was only working with a couple of poorly lit referance photos and drawings when I did this many years ago. here is how mine turned out.
Give it a try, it is pretty much a standard APC interior with a few extra bits added to it.
I have given the same interior treatment to the AFV Club LVTP-5, Academy Warrior, a couple of Tamiya M2 and M2A2 Bradleys, a Tamiya M113A1 Fire Support Vehicle, a M981 FIST-V, an M7 B-FIST, an M88A1, an M109A2 Howitzer, a T-34/85, and a bunch of M113 varients as well. I like all my APCs to have interiors. Guess I am a glutten for punishment.

Propaganda Kompany has a resin AAV interior set listed on their "2004 releases" list. The problem is that it's been there for monthes...The initial release date was september 2004. I think that scratchbuilding would be the way to go (Gino has shown you the way), provided you have some reference stuff (I have gathered about 100 pics but my own project is still on the back burner....)

I've scratchbuilt one for the LVTP7A1 a while ago.
If the interior is basically the same, I could send drawings and pics of the in-progress kit to help.

There used to be some good pics on AFV Interiors, but sadly it's gone now. But maybe you could get them by getting in touch with it's editor (?). his e:mail is on the old AFV homepage

Here are 2 pics of the real MacCoy that could be helpful :
One thing that looks a bit strange to me is the shape of the engine bulkhead. It seems that the lower part of it (under the access panel) is not vertical .... I don't believe it has something to do with the picture itself, as I have noticed this on other pics as well..

I don't remember exactly what review issued them, it might well be H&M. It presented a LTVP7A1 and a LTVC ashore.
The drawings concerned the APC variant only.
