After the completion of all desired weathering and other effects, what is thebest way to "finish" the model? I was thinking of just airbrushing a matt varnish over the entire model just as I had before drybrushing. I have read that people use something called matt gunge for an overspray but I have not been able to find this product. Also, is it a good idea to add some Buff or Sand color with the matt varnish to give a bit of a dusty look?

Nearly any kind of a clear flat will work for the finish. I use Model Master's Acrylic Clear Flat. As far as adding color to the flat, I would personally steer away from that idea.
Also, when applying the finish, some of the (if you used em) pastels will loss some of their color. This can be compenstated by applying a little more before the finish coat or after.

I'll defer to Ken's expertise regarding all painting issues, because he does beautiful work.

However, for my own two cents, (and I'm no pro), but I pretty much use my air brush from base coat through the final stage of weathering, (I use washes also, and do some brush highlighting).

I model strictly armor and softskin vehicles and I've found within a few minutes of applying my final weathering, I tie it all together with a quick wash of Model Master Acryl Thinner right out of the bottle over the entire vehicle, (applied with a soft brush). This seems to soften and blend everything together.

It works for me.

(Almost) Final touch for me is a coat of Testor's Dullcote laquer. If there are any parts that need glossiness, such as fresh leather, I'll hit it with brush applied gloss. If I think there needs to be a bit more dust, smoke stain, etc. I'll apply a bit more chalk pastel. I fully concur with Ken, don't add any color to your flat finish. Get the colors you want during the painting/weathering process.

But if you apply pastels afterwards, how will they stay on the vehicle?

Oberst - Pastels put a twist in the methods.
Two choice have been posed in recent postings.
1. Spray your dull coat first. Then apply pastels.
2. Apply pastels and then either forget the dull coat or spray on Lightly.

There is an article about apply pastels so they really stick, something about acitone. Look throught the Features section.

They will stick reasonably well if you rub them in solidly and don't handle the model too much.
