Which 251 german halftracks did the Grossdeutchland division use? Did they use all of them (variants) or selected ones.

Considering that GD was an elite unit I would say its pretty safe to say they had or had attached to them at least most varients of the 251.

i have a DML 251 ausf. C (basic troop carrier) and the instructions say it was used by the GD in Kursk 1943.

depending on what year you're planning would dictate which generation of halftrack would most likely have been used but other than that, I'm sure at some point they would have had all kinds of vehicles attached to them for various different campaigns.
I am using an sd.kfz 251/1 ausf D attached to the 12th SS Hitlerjugend for a diorama in Caen myself.
the DML Sd.kfz kit I have got was a true pleasure to build and I'd recommend it to anyone.

According to some pictures and drawings in "Panzer-Grenadier-Division Großdeutschland und ihre Schwesterverbände" by Horst Scheibert they definitely had:
251/1 (Standard)
251/3 (Radio equipment)
251/7 (Pioneer)
251/16 (Flamethrower)
251/10 (3.7cm gun)
but it`s very likely they had a lot more versions.
