Is Accurate Armour my only option? I know that Airfix did one in either HO/OO or 72nd, but I'd like to find one in 35th injection plastic - does such a thing exist?

A plastic AEC Matador does not exsist so your only option is to either scrastch build one or go the AA way.

Like all resin kits the AccA Matador is expensive, but it's a beautiful kit, one of the best I've made

Hi If I remember correctly Cromwell Models also make one, but not sure if it is still in production.

You are correct - Cromwell Models do indeed make a Matador - a lovely kit, just as nice as the AA offering - you can confidently choose on price.
