Why don't the manufacturers look at what we use? I see more Medium ALICE packs on models when the Large is obviously issued to the infantry as well as others. Does any one of them make a decent Large ALICE or MOLLE? Do I need to start scratch building frames for them all? And what about the assault packs we use today?

There are some out there, you just have to know where to look.
DML's Special Forces figure set, #3024, has a couple really nice large rucks, and even includes the add-on pockets thht some people have. It also has a pretty good early MOLLE pack as well, which includes a separate assualt pack on top. It also has a Medic Aid pack.
DML's Modern Marine set, #3027, has a nice backpack-style assualt pack too.
DML's new USMC M1A1 Baghdad kit comes with a really nice set of bags too. It includes MOLLE packs, covered Ruck sacks, and two different types of duffel bags.
Tamiya's new US Equipment set has large rucks separate, and in clusters with medium rucks. It also includes the new sleeping bag in thr stuff sack as well.
