I use styofoam to build the structure. Then bust a big hole where required. Skin the foam with plaster or drywall compound. With the extra plaster, break it up into chunks for rubble. Here is my bunker but it's not destroyed. Notice I embedded some wire to represent rebar. I also used popsicle sticks to make some lines to look like the mold seams between the planks when they poured the cement

Matt, Check model railroad sources on the web and focus on "Scenicking". I have to say if there is a hobby to teach that (and other) technique, it is it.

I agree that styofoam is an excellent material for a bunker... here is a neat tip... go to a nearby electornics store.. you will find in their dumpster area tons of preformed styrofoam corners that look like they are perfect shapes for concrete bunkers... just add the thickly textured plaster of paris - or spackle - and you are read to go. After the plaster dries, pop off sections of plaster to insinuate battle damage.
