Hey Dave from Australia - G'day mate!
I've dug up a couple of sites for you to check out - afraid I'm too computer ignorant to make this an easy thing but here are the addresses nonetheless:
www.jpsmodell.de/main_e.htm
www.ipmsstockholm.org
These two sites describe slightly different color schemes for your project.
I must admit that according to the first site there seems to be conflicting information - let me try to explain. When you look at "Don Color's" information you will find a page that says that all F-16's in the USAF inventory receive the "Hill" scheme and mentions two colors - FS 36118 & FS 36270. Now on that same page there is a button entitled F-16 and upon clicking on it you see a color profile and plane view of that scheme - the problem is that in this view there is a key that mentions a third color: FS 36320!! NOW WHAT THE @#?@?? Whazzup with that?! It is very difficult to tell for sure in the illustration because FS 36270 & FS 36320 are so closely shaded but it is my GUESS that if you're going to use this scheme that FS 36320 goes on the radome only, with FS 36270 being the color used on the underside and the very front of the topside between radome and darker FS 36118.
Moving right along, "Urban Fredricksson's" info implies that the USAF's F-16 are indeed painted in a three color scheme. He proposes that the colors used are FS 36118, FS 36270, & FS 36375. Boy-oh-boy, this can't just be a simple thing, huh! Once again, it is my GUESS that FS 36118 is the darker topside color, FS 36270 goes on the bottom and a small portion of top between darker color - FS 36118 - and radome, and that the radome is painted the "odd-man-out" color - FS 36375.
I tell you, man, it's enough to confuse a termite in a yo-yo! Maybe someone else out there reading this mess has some more definitive input.
What I do know about all of this is that Vallejo does not make a match for FS 36320 or FS 36375 but Model Master Acrylics & Enamel line of paints does. FS 36320 is 4761 (Acrylic)/1741 (Enamel) and FS 36375 is 4762 (Acrylic)/1728 (Enamel).
Concerning the issue of Vallejo #868 (match for FS 36118) looking too dark....man, I agree with you that it appears dark. I happen to have Tamiya, Model Master Acryl, and Vallejo on hand so I'll dab some paint on some spare plastic laying around her and let you know what it looks like, of course you'll still be stuck with a subjective opinion. Oh well, best I could come up with.....maybe someone else has something to say on the matter.
Good luck with your project.

Hold the presses!!!!!! Just went on Vallejo's website and found out the in their Model Air color range they have a match for all the FS colors mentioned in my previous post.....D'oh.
#053 (Dark Seagreen 4A) matches FS 36118, #049 (Medium Sea Grey 4A) matches FS 36270, #047 (US Grey 4A) matches FS 36320, and #050 (Light Grey 4A) matches FS 36375............
Dave, I don't have any of these Model Air paints to try out for you. I do understand that they are great paints for the airbrush, coming pre-thinned for that purpose.
Live and learn.....live and learn.
