I need pictures. Does anyone know where can I find pictures of the interior of the drivers cab of the M923A1 truck? I think that the Italerikit is a bit "naked", and could need some extra details.

Sorry, no pics, but here is a link to Vodnik's superdetailed build of one.
Also, biggest mistake is the manual shift lever, it shouldn't be there. There should be a T-bar shifter on the angular piece that comes up from the the center section of the floor and meets the dash board. It has an automatic transmission.

Here are 2 pics of a M925 showing the automatic transmission T-bar. I think the two other levers with a ball-shaped end are those of the winch, the M925 being a M923 fitted with a winch

Correct, the right most lever engages the PTO giving power to the winch. The center lever controls the winch (pays the cable in or out).I think the two other levers with a ball-shaped end are those of the winch, the M925 being a M923 fitted with a winch

I've re-uploaded my M923A2 and M931A2 photos to the current motor pool gallery (accessible through the link in my signature banner). I was kind of lazy and did not identify many of the shots as an M931A2 vs. the default M923A2. I may go back and properly label the photos, but it is not high on my priority list.
Any way, here is a shot of the shift lever of the 900 series truck without the winch:
