I was curious about IDF ambulances based on the M-997 Humvee (yes, the Legend conversion kit). What color and markings should they be? I tried googling and various other searches, but not much comes up at all. I thought maybe you guys with more experience in this category might be able to help out.

Thanks!

They are standard IDF colors, currently a more greenish sand color. Instead of red crosses on it though, it would have a red crescent, as is used in most of the Middle Eastern countries, or a red Star of David, as seen below on an older version.

I don't think they would have the red crescent as that is a symbol of Islam.
Here's a link to a news story related to the Red Magen David being accepted as part of the Iternational Red Cross and Red Crescent:

Gino is correct.
The shade varies considerably. In the south they tend to be more of a sand color and in the north it runs towards the gray/drab.

The Legend set looks nice and its a good value to spice up the Academy kit!
