Is it correct to use this kit as a UN vehicle? In what conflict and which country used it?
Is there any other Italeri Leo I could use?

Yes, if you add the Danish mods to it. Accurate armour make a set in resin:

The Leopard 1A4 never deployed on any mission anywhere. It was only used by Germany and Turkey(but these were modified).
The only version of the Leopard 1 that was deployed on a UN mission was the Danish Leopard 1A5DK(modified and updated Leopard 1A3)....and that was to Bosnia with UNPROFOR in 1994.
The only other Leopard 1 based vehicles on a UN mission were two Canadian Badger AEVs in Croatia in 1992.
You can use the Italeri Leopard 1A4 kit and the Accurate Armour Danish Leopard 1A5DK conversion set, kit C072, to build an accurate version.
I have used the conversion set and it is very nice....My build article, "Albino Cat", can be seen in AFV Modeller magazine, Issue 14.
For decals you will have to come up with your own as there are none in the conversion kit. There are plenty of references for the white Danish Leopards on the internet.

Not quite correct.
The Danes also had one Bergepz 2 in Bosnia.
