They appear in two books that I know of:

Hunnicutt's "Armored Car" and one of Zaloga's titles by Concord. Eduard makes a set to upgrade the Tamiya jeep.

You can download the Eduard instructions to see how they look like. It's item #35249.

Bilek also offers a kit of the vehicle with the Italeri Jeep in the box, and photoetch shields included.

The two picutres I have seen (and the ones that the available PE armor sets apear to be based on) were of jeeps from the 82nd Airborne. "Rare WW2 Jeep Photo Archive" published by Jeep World, has both pictures. The first (and ive seen in other sources) is the one during the winter of 44/45 and shows a column of armored jeeps moving with about 6 soiders loaded up. Not much extra gear, just the armor over the radiator grill, plus the armor around the passenger and driver seats, with a mounted 30cal. I have seen pictures of one of these restored in some musem somewhere (patton maybe?)
the other picture is several months later of the same jeep, now fitted with additional armor plates along the cargo area (rear seat), a radio installed on a shelf along the right side, antenna mount is on the left side right where the windsheld mount would be, and a camo net rolled up on the hood.

Maybe the 82nd airborne webpage has some pictures?

Hope this helps.
Andy

What about this one (from an old OOP french book about the Jeep) ?

The caption says :"An american patrol with armored jeeps near Bastogne (end of december 1944)"

Here are 2 more (from www.g503.com forum ). Both belong to the 82nd Airborne :
