Welcome Brian! Humvees are totally addictive IMHO... just so many varients. Brents links are a very good reference but you can get lost in all the detail.... a simple guide would be start with the two Tamiya (M1025 & M1046) as they are. After that there is the new Bronco M1114 or you could go for a Tamiya base kit and a Legend, Pro Art, Blast or other upgrade to a different version. There are soooooo many to choose from.
Some of the Academy kits, while not 100% accurate or as detailed, still build into very nice models. I'm thinking here of the I.E.D guntruck and ambulance versions
So many possibilities: so little time....

Yes

http://www.www-legend.co.kr/
All of Legend conversion sets are based on Tamiya M1025/M1046 kits as they're the best game in town...

Finished. Hamer Magen David IDF - a modification of M997A2 HMMWV Maxi-Ambulance. It doesn't depict any particular vehicle, it's just a gathering of ideas from many pictures.
Base: Academy (1352) M997 Maxi-Ambulance,
Conversion: Legend Productions (LF1126) IDF Humvee Ambulance Conversion Set,
PE parts: Eduard (35166) M-997 Ambulance,
Wheels: Blast Models (BL35027K) M1025 HUMVEE Wheels Aggressive pattern with new rim.

And another one is coming - M998 HMMWV M252 Mortar Carrier:

Amazing work on the IDF ambulance Kuba...Just awesome!
I'm looking forward to your Mortar conversion.
The maintenance section in my Infantry Battalion has ordered the parts to convert four of our M1097A2's to Mortar carriers for the Mortar section. I'm anxious to get pictures of those vehicles when the conversion is complete. I had originally specified M1038's for the conversion project, but have since had to replace those with M1097A2's that have been shipped to the unit.
I regret that I will probably never get pictures of a Mortar carrier based on the M1038 since the M1038's are all being removed from service.
I look forward to your progress pictures.

Humvee number 24. It's a standard M998 HMMWV Cargo/Troop Carrier converted into M252 mortar carrier, from 3/325 Airborne Battalion Combat Team, during "Ardent Ground" exercises, Germany, 1994.
Built from Italeri's (6484) M1097A2 Cargo Carrier. Wheels, seats and almost all minor parts taken from Tamiya. Mortar an ammo from Trumpeter's (00423) Modern U.S. Marine M252 Team. Ammo basket and bushguard scratchbuilt. Painted with brush and Humbrol enamels.

Number 26 - M1025 HMMWV Armament Carrier, Military Police, Somalia 1993. It's a mish-mash of Academy/Italeri/Tamiya/Eduard parts.

Looks great Kuba, as usual.
How do you do the straps on tail-gate and ammo cans?

The straps are taken from Eduard PE set (for Tamiya's M1025 Humvee).

Hey Kuba, Where have you been?
Great work so far. I'm especially looking forward to seeing your m1151 since I have one lined up as well.

Thanks guys
I'm still here, but recently I have little time for models. And I'm making three of them at the same time - that's why I haven't finished anything for many weeks. But step by step I move forward

Number 27 in collection. First model from planned trilogy "The Police Story" - M1114 Up-Armored Humvee with Frag Kit 5 armor, belonging to Afghan National Police.
Bonnet, front grill and whole undercarriage (frame, suspension, wheels) taken from Academy's M1151 set. The rest is from Bronco's M1114 Frag 5. DShK machine gun is mixed from Dragon's Chinese Volunteers figure set and Tamiya's T-55 parts. I've added only steering joystick and wiring in O/GPK turret. Decals (litlle bit imaginary) made on request.
Model has got incorrect wheels, all ANP Humvees have got BTGoodrich Baja tires, I've used Good/Year MT/Rs left, as mentioned, from Academy's M1151.

I'm always happy to see more obscure subjects. Can't wait to see the other members of this trilogy.

Kuwaiti and Iraqi Humvees are finished - they're numbers 28 and 29 in my collection.
First: M1025A2 HMMWV Armament Carrier belonging to Kuwaiti Police. Base - M1025 Academy. Wheels - Voyager Model. Machine gun - Bronco. Some parts from other models and from Eduard's PE sets. It's clean, because depicts a vehicle from military parade.

Second: M1025P1 HMMWV Armament Carrier with ASK belonging to Iraqi Police. Undercarriage and lower part of the body - Italeri. Roof and turret - Tamiya. ASK - Eduard (sides, doors) and scratch (front window and the bulkhead). Turret armor - scratch. Airco - Pro Art Models.

That's how all my Police trilogy looks together:
