Why not have a UFO in there the Germans were reportedly working on flying discs and anti gravity technology??

Why not?
After all, if things had gone according to plan for the Axis, the Germans would have rolled up the Caucasus and driven on through Egypt and the Middle East, the Japanese would've taken India and they'd have all met up somewhere in the Persian Gulf region (or maybe even a little further north in Afghanistan, as you suggest).
I've seen nicely done "What If" dioramas of fantasy German armour (some of it looking like stuff straight out of Star Wars) in the USA, which make your projected scenario fairly restrained by comparison.
If you want to build it - just go ahead and build it.

do I remenber reading somewhere that some of the German forces wanted the Allies to join them in defeating the Russians?
Imagine all the King Tigers, Panthers, Shermans, Stuarts, Jeeps Pershings with German ambush cammo and Allied stars. With various countries crewing them. (It'd make a change from trying to figure out what shade of green a Brit Sherman had in NWE 1944!)

I have also read about those plans of the OKW occupying the east. Indeed they intent to meet the Japanese ground forces at India.
But if you want to create a what-if? scenario you should think about the type of tank you like to use.
The Wehrmacht would have introduced E-100, Maus, Tiger III, Löwe and Panther II....

I don't think that the Western Allies would've taken the time to re-tooled to mass produce more German AFV's with the Russian's continuing their westward advance against (to all intents and purposes) a new enemy.
IMO It'd be more likely that German units would be supplied with Allied equipment (Think of the US extending Lend/Lease to the Whermacht)
Also without the Allied bombing of their industry and the ability to import raw materials and oil through the western ports to their factories production of war materiels would increase dramatically. (not just for their land forces, the Luftwaffe would be able to build oodles of Me.262 fighters etc.)
Maybe even have Allied troops being armed with MP44 automatic rifles and MG42s.

I'm no expert on the subject but that dose sound a bit more likely? the whole subject of "WHAT IF" is interesting some of the stuff the German scientists were working on was really far ahead of the what anyone else had. like i said earlier the whole flying disc anti gravity stuff mite have been Germans crashing at Roswell for all we know

Actually working on a "What If" diorama called "A Surprise for Uncle Joe" with a jadgtiger and a Pershing in hull down waiting for advancing Soviets in November of 1945.
Got the idea from a Steel Panther World at War scenario called "Uncle Joe's Surprise."
In that scenario the Russians attacked US border guards en mass and the US has to bring up reinforcements.
No UFOs involved, though...

Actually, one of the big things Patton got in trouble for was pushing this idea! He told Bradley, " The Russians aren't going to give anything back. You know we'll have to fight them eventually. Why not let me do it now while I have the guns, men and tanks to do it?"
